I like pork barbecue eastern NC style. Nothing’s better. With some hush puppies and a tall iced tea. Banana pudding for dessert. I’m hungry.

North Carolina has a different type of BBQ I believe. I love it…..

If I have it correct I believe North Carolina style is the more mustard based sause…. S. Carolina usually has more vinegar in it and down in GA alabama is more of a sweet sauce.

NC has two kinds of barbecue. Eastern NC barbecue is based on vinegar and red pepper. Western NC barbecue is “red sauce”. Here in the eastern half, it’s called white sauce. I don’t know about mustard, but it must be in SC. To my knowledge, eastern NC barbecue is unique in all of the USA. If you’ve never had it, email me and maybe I can send you some. It’s FANTASTIC.

Man I love the vinegar one. It really has an unusual taste. You can’t find that type of bbq unless it’s a bbq speciality type place. In Harrisonburg VA there is a great place called RT’s Chicken. It’s incredible.

Are we Talking Pork here? or do you guys do brisket like those folks in Texas and Oklahoma do.
i am of the opinion that if I wanted beef I would eat a steak… If you want BBQ you go pig…

Definitely Pork…and mustard based barbeque is midlands/lowcountry SC bbq. I like it fine but I like eastern NC the best.
I also think that vinegar based slaw as opposed to maynaise based is also the best complement to pork!!!!

I like pork bbq… i also love brisket but I absolutely love that vinegar bbq on chicken.
I love Shane’s Rib Shack… they have a bunch of different types of bbq and they have a big pork bbq called the Big Dad. It’s really good, but huge.

I smoked a 20 pound brisket today. It took about 5 1/2 hrs and it was soooo good. I mixed up a tomato/mustard base sauce mixed with Mr. Yoshitas sweet and savory and Texas Pete hot sauce. Pretty tasty.

Dang, talk about ribs before breakfast, I love it.
I grew up around Kansas City and we know a little bit about bbq as well. Isn’t NC where they put cole slaw on their bbq sandwich?
A very old but wise bbq artist told me there were two neccessary ingredients to excellent bbq:
1. A pig must die
2. A black man must be present
